I don’t know about you but heading out for a trip during the Fall is so magical. Typically the gray skies make me want to get out on the road already, but the cold weather is perfect for hot chocolate, a book on tape, and a snack for the road.

In traditional Autumn behavior, I think it’s best to find someplace outdoorsy. Soak in some of the natural scenic views, and of course light up a campfire. The perfect s’more recipe is coming but what are some other easily packable foods you can make ahead of time to munch on while you are away?

If you are looking to hop into your Edmunds car and head out for a couple of days this weekend; we have some recipes you have to make during the trip. All of these foods can either be made ahead or out on the road and will provide you with some delicious options for your trip. 

S’mores 

S’mores are perhaps one of the most infamous treats you can make out on the road or on a camping trip. And you can make S’mores the old fashion way or try this fun autumnal twist. These are so simple and fun to make, allowing you to enjoy a beautiful dessert with little to no effort at all! 

Ingredients: 

  1. Get a fire started and allow it to come up to heat. 
  2. Set up 2 graham crackers, place your peanutbutter cup on one graham cracker.
  3. Grab your marshmallow and place it on the end of a metal skewer. Hold it over the flame and allow it to get toasted on all sides. I like a little charcaol for flavoring.
  4. Once the marshmallow is hot and toasted, place it on top of the cracker that has the peanut butter cup on it. Sandwich the other cracked on top, and squeeze, allowing you to pull out the skewer. 
  5. Enjoy! 

Falafel and Red Pepper Wraps 

Completely vegan, these simple and nutritious wraps are the perfect choice for any road trip and they will provide you with some much-needed vegetables and protein on your journey. The best part is these pack really well into a cooler and you can eat them cold!

Ingredients: 

  • 1 can chickpeas 
  • 1 bunch coriander 
  • 1 tbsp cumin 
  • 1 tsp chilli powder 
  • 1 tbsp flour
  • 1 spring onion 
  • Zest of 1 lemon 
  • Roasted red peppers 
  • 2 tortilla wraps 
  • Orignal Hummus 
  • Spinach 
  • Grated carrots 
  • Chilli jam 
  1. To make your falafel – add chickpeas, spices, spring onion, lemon zest, and flour to a food processor and pulse until smooth. 
  2. Form into balls and chill in the fridge for 30 minutes. 
  3. Heat up a pan with some vegetable oil. Fry the falafel for 4 minutes on each side. 
  4. To assemble the wrap, spread hummus on the wrap. Add spinach, grated carrot, and falafel. Drizzle over some chilli jam and wrap up. 

Chicken and Lentil Salad 

This easy recipe is a healthy meal on the road and is one that you can easily whip up while you are out and about for a protein-filled meal. 

Ingredients: 

  • Rotisserie chicken, shredded 
  • 1 sachet puy lentils 
  • 1.5 oz of cubed feta 
  • 1 bag of spring mix
  • Juice of 1 lemon 
  • 8 cherry tomatoes 
  • ½ cucumber 
  • Handful grated carrot 
  • 2 tbsp Mint 
  • 4 tbsp plain Greek Yogurt 
  1. Combine the mint and yogurt and mix well. Season to taste. 
  2. Chop your cucumber, removing the seeds and skin to prevent indigestion. 
  3. Slice cherry tomatoes in half and sprinkle sea salt on them to season.
  4. In a large salad bowl, add your mixed leaves, chicken, feta, lentils, and carrot. Mix. 
  5. Add the rest of your salad ingredients and add small dollops of mint yogurt throughout. Squeeze some lemon juice on.
